KOGI from Los Angeles, CA!
August 2008: Mark Manguera and Caroline Shin had joked about fusing two of L.A.’s favorite cuisines by opening a Korean BBQ truck—then Shin meets the owner of a few mobile operations, who offers her a truck for a month to test the idea.
November 2008: The two, now joined by chef Roy Choi and selling Mexican-Korean creations like kimchi quesadillas, start with the bar crowd, opening at 11 p.m. Crowds line up ever earlier, until the truck eventually starts opening at lunchtime.
March 2010: The team christens its first sit-down space with the name Chego. Their boast: “It’s everything you’ve ever wanted. In a bowl.”
