The lovely Laura DePalma (Every Day with Rachael Ray Research Editor and chef extraordinaire!) and I enjoy taking lunches together when possible, be it trying restaurants near our Midtown offices or showing off some healthful home cooking. Today’s menu? I brought in a batch of my curried red lentil soup and whipped together a kale salad with turkey, lemon-marinated zucchini ribbons, avocado, stilton cheese and champagne vinaigrette. Enjoying what will hopefully be the last of the gloomy wet weather to enjoy a final bowl of hearty soup before summer weather hits!
